Peter Kohlmann

When Peter Kohlmann took on his first role in the hospitality industry as a dishwasher at the age of 14, he was immediately hooked. The heat, the pressure, and the hard work in a professional kitchen intrigued him. However, at the age of 15, he chose to join the service team. It quickly became clear that owning his own restaurant was the ultimate goal. After an adventure abroad, the 19-year-old maneuvered towards the higher hotel school. At the age of 23, he decided to return to the kitchen with the goal of fully mastering the workings of the “back of house”. A year of training at restaurant C (as a commis chef) under Arnout van der Kolk taught him a lot about the fine dining kitchen with a French foundation. After a year, he moved on to Café Restaurant Nieges, where he received an offer from Casper Moolhuijzen to work in his kitchen as a chef de partie. Here, he learned how to serve a large number of guests at a high level. A year later, Casper offered him the position of sous-chef at Cafe Nieuw Amsterdam. Leadership and organization were central. After Cafe Nieuw Amsterdam, he wanted to focus more on his learning path and applied to Sander Bierenbroodspot for a position in his kitchen. During his time at Sinck, he held the honorable position of sous-chef, working closely with top sommelier Sabas Joosten and regularly cooking for many Michelin-starred chefs. During his career at Sinck, he met Bart van der Kley and Tommy Rooimans. Two young entrepreneurs who started a student catering company during their student days in Groningen, which quickly grew into a reputable company in search of a third partner with specific hospitality and kitchen experience. All the pieces fell into place, and at the age of 28, Peter joined Chimi & Churri Catering. Shortly thereafter, the three of them opened Bar Chimi on the Amstel.
