Peter Lute

Peter Lute sought ways to express his creativity from a young age. In nature, he searched for the scent and movement in the onion fields he passed while cycling to school, on the water as an avid surfer, and also through making models to give shape to the ideas in his head. His passion for building and creating something led him to the kitchen, where the organization surrounding it quickly fascinated him, and the entrepreneur was born. From Dikker&Thijs in the 1980s, through various starred restaurants and large hotels, the moment came in 2001 to explore whether his own venture was possible.

In 2002, he opened the restaurant LUTE together with his wife Marieke LUTE in the old gunpowder factory in Ouderkerk aan de Amstel. This place has always remained the foundation. Over the years, there have been many projects associated with LUTE’s name. “You learn from everything, whether it is more or less successful.” The restaurant in Ouderkerk still stands proudly, and together with daughters Sara and Isabelle, this place has gained new energy and is now called Fêtevis. An accessible restaurant where fish takes center stage.

In addition to Fêtevis, there is the unique restaurant GREEN on the 26th floor of the Valley building on the Zuidas in Amsterdam. A speakeasy restaurant with the most fantastic view over Amsterdam and beyond. The dishes are primarily vegetarian, and fish and meat are served as side dishes.

The newest challenge lies in the Noordoostpolder, in Kraggenburg, in a place where no one would start a restaurant. In an old barn of precast concrete with clean, perfect lines. A new place where the feeling of building and creating something new is once again abundant. It is set to become a grand restaurant, with space for a limited number of guests, not open all year round. A self-sufficient place where a portion of the vegetables is already grown for use in the restaurants. Construction takes its time, and the opening is planned for the fall of 2025.
