Soenil’s dishes form a harmonious composition of taste, aroma, color, and shape. Naturally, taste takes the lead in this. Each flavor has its own strength and intensity. Step by step, Soenil works towards a true flavor explosion. Every bite should be a celebration, should dance. Coming all the way from the Michelin-starred restaurant De Lindehof**, Soenil will be cooking at the BITE Chef’s Table this year.

Chef and owner of the two-star restaurant De Lindehof in Nuenen, Soenil Bahadoer has given the Dutch culinary culture a boost. Soenil says, “I have opened up the Netherlands to a different taste experience. My Hindustani identity has always stood behind the stove. I have generously applied the influences of Surinamese-Hindustani cuisine. Stubbornly so. Using spices and flavors that I learned from my mother.”

Restaurant De Lindehof is located in an upscale neighborhood of Nuenen. The dining tables offer a view of the kitchen. Chef Soenil himself comes to explain the menu to share his passion with the guests. Soenil says, “In a two-star restaurant, you go for the experience. It should be a celebration. Your coat is hung up, the tables are beautifully set, and you want to feel a certain excitement.”

When it comes to cooking, Soenil Bahadoer’s ambition knows no bounds. “It has to, because to maintain your second Michelin star, you have to fight.
